<p>“These French-inspired meatballs are both quick and economical. They’re gently spiced, wonderfully fragrant, and also come together in minutes — perfect for busy evenings. Serve them with couscous, rice, a simple green salad, or even tossed through spaghetti for a bistro-style supper”.&nbsp;<br><em>Serves 4. Prep time: 15 minutes; chilling time 60 minutes; cooking time 12 minutes</em>.</p>



<p><strong>Ingredients</strong></p>



<ul class="wp-block-list">
<li>500g lamb mince</li>



<li>One onion</li>



<li>Two large cloves of garlic</li>



<li>One heaped tablespoon tomato paste</li>



<li>Three teaspoons smoked paprika</li>



<li>One teaspoon salt</li>



<li>One teaspoon ground cumin</li>



<li>Half teaspoon ground cinnamon</li>



<li>Half teaspoon ground coriander</li>



<li>Half teaspoon ground cayenne</li>



<li>Zest of one lemon</li>



<li>One to two tablespoons olive oil</li>
</ul>



<p><strong>Method</strong><br>1 Peel and finely grate the onion and garlic into a large bowl. Next, add the lemon zest and all remaining ingredients.&nbsp;</p>



<p>2 Using your hands, massage the spices into the mince. If you have the time, let the mince rest for one hour, which will give the spices time to infuse the meat.&nbsp;</p>



<p>3 If refrigerated, remove from the fridge at least 30 minutes before cooking. Divide mince into 12 equal portions and then roll into balls.</p>



<p>4 Heat olive oil in a frying pan over medium-high heat. Fry the meatballs for several minutes on each side until browned and cooked through. Serve immediately.</p>

<p><strong>Get ahead!</strong> The seasoned mince can be prepared a day in advance. Alternatively, after the one-hour rest, roll the mixture into balls and then freeze. Place them on a tray to freeze individually first, then transfer to a freezer bag once solid (this prevents them from sticking together).</p>

<p>“This velouté is proof that the humblest cupboard staples — red lentils and tinned tomatoes — can be transformed into something silky, soothing and deeply satisfying. It’s nourishing, naturally economical, and comes together with very little fuss. Paired with herb butter baguettes, warm and fragrant from the oven, it feels far more luxurious than its ingredients suggest”.&nbsp;<br><em>Serves 4. Prep time: 15 minutes; cooking time 20 minutes.</em></p>



<p><strong>Ingredients</strong></p>



<ul class="wp-block-list">
<li>Four onions, peeled and finely sliced</li>



<li>Four tablespoons olive oil</li>



<li>One heaped table spoon tomato puree</li>



<li>200g red lentils</li>



<li>1000ml good quality vegetable stock</li>
</ul>



<p><strong>For the herb butter baguettes:</strong></p>



<ul class="wp-block-list">
<li>250g butter (plant based if desired), very soft&nbsp;</li>



<li>Large handful of fresh parsley or 40g frozen parsley, defrosted</li>



<li>One shallot</li>



<li>Generous pinch of sea salt</li>



<li>Four small baguettes or one large baguette&nbsp;</li>
</ul>



<p><strong>Method</strong></p>



<p>1 Fry the onions in the oil for about 10 minutes, until soft and starting to turn golden. Stir in the vegetable stock, lentils, and tomato puree.&nbsp;</p>



<p>2 Simmer for 10 minutes or until the lentils are very soft, then blend until smooth. Pass through a sieve to make the soup extra smooth.</p>



<p>3 While the soup is cooking, make the&nbsp;herb butter baguettes.&nbsp;Preheat the oven to &nbsp;180°C<strong>&nbsp;</strong>fan. Peel and finely chop the shallot. Finely chop the parsley (if using fresh) and then beat with the shallot, salt and the butter until it’s well combined. Use immediately or form into a block or sausage shape.</p>



<p>4 Next, every 2cm cut halfway through the baguette (not all the way through) to be able to put slices of the garlic herb butter in. Bake until the butter is melted and the baguette is golden.</p>



<p><strong>Get ahead!</strong><br>The soup can be made a couple of days in advance or be frozen for a month. Add some extra vegetable stock to get the desired consistency (the soup tends to thicken when chilled). The butter Can also be kept well sealed in the fridge for a week or frozen for a month.</p>

<h2 class="wp-block-heading">Spring garden gratin with Kettle Chips crust</h2>

<p>“This spring garden gratin is homage to those Parisian bistro classics that I adored during my time in the City of Light. The combination of tender spring vegetables in a pull-apart cheese sauce is casual French cooking at its best. It&#8217;s not too fussy and bursting with flavour. What makes this a truly special dish is the clever crust made from Kettle chips, arranged on top with vegetables peeping out like little garden plants. Bon appétit!&nbsp;<br><em>Serves 4 as a side or starter. Prep time: 20 minutes; cooking time 10 minutes.</em></p>



<p><strong>Ingredients</strong></p>



<ul class="wp-block-list">
<li>200g asparagus</li>



<li>75g fresh peas or sugarsnaps</li>



<li>One large leek, washed thoroughly and finely sliced</li>



<li>One clove of garlic</li>



<li>20g unsalted butter</li>
</ul>



<p><strong>For the cheese sauce:</strong></p>



<ul class="wp-block-list">
<li>25g unsalted butter</li>



<li>20g plain flour</li>



<li>250ml whole milk, warmed</li>



<li>100g Comté cheese, grated</li>



<li>750g Reblochon cheese, grated</li>



<li>A sprig of fresh thyme</li>



<li>Pinch of freshly grated nutmeg</li>



<li>Salt and white pepper, to taste</li>
</ul>



<p><strong>For the crust:</strong></p>



<ul class="wp-block-list">
<li>150g Kettle Chips Brie and Caramelised Onion flavour</li>



<li>A bunch of chives</li>
</ul>



<p><strong>Method</strong></p>



<p>1 Peel the garlic,&nbsp;cut it in half and then rub the cut half all over the insides of four ramekins.</p>



<p>2 Bring a pot of water to the boil with a generous pinch of salt. Remove the woody part of the asparagus and chop the stalk into 0.5cm rounds, leaving a 3cm long tip. Once the water comes to a boil, add the fresh peas or sugarsnaps and asparagus tips, boiling for two minutes then drain. </p>



<p>3 Add the butter to a pan and place on a medium heat. Once melted and bubbling add the sliced leeks and asparagus rounds. Cook until soft, stirring occasionally. </p>



<p>4 For the cheese sauce, place a pot&nbsp;on medium&nbsp;heat. Add the butter and once&nbsp;melted, stir&nbsp;in the flour. Take off the heat and whisk in the milk gradually. Place back on the heat and continue to whisk, also making sure to scrape the edges and base of the pan so the sauce doesn’t burn.&nbsp;Once the sauce starts to bubble, reduce the heat to low and whisk in the pepper, nutmeg and cheese. Stir in the leek mixture. Taste and adjust seasoning if required.</p>



<p>5 Divide the cheesy vegetable mixture between ramekins and arrange the Kettle chips on top followed by the blanched asparagus tips, sugarsnaps and chives. Serve immediately.</p>

<h2 class="wp-block-heading">Chicken paillard sandwich with brown butter crispy capers</h2>

<p>“Using the French paillard technique, you gently pound the chicken breasts until thin, helping them cook in minutes while making the meat go further. The brown butter and crispy capers add a nutty, salty richness, balanced by a crunchy slaw and vibrant mango dressing. Serve with crusty while rolls and mayonnaise.&#8221;<br><em>Serves 4; preparation time 30 minutes; cooking time: 15 minutes.</em></p>



<p><strong>Ingredients</strong></p>



<ul class="wp-block-list">
<li>Two chicken breasts with skin (approx. 300g total)</li>



<li>Two tablespoons olive oil</li>



<li>50g unsalted butter</li>



<li>Four tablespoons capers</li>



<li>Generous pinch of salt</li>



<li>Pepper</li>
</ul>



<p><strong>For the slaw:</strong></p>



<ul class="wp-block-list">
<li>200g green cabbage, thinly sliced</li>



<li>One small onion, peeled (approx. 40g)</li>



<li>One tablespoon olive oil</li>



<li>Pinch of salt</li>
</ul>



<p><strong>For the mango dressing:</strong></p>



<ul class="wp-block-list">
<li>250g mango flesh, roughly chopped</li>



<li>One lime</li>



<li>One tablespoon apple cider vinegar</li>



<li>One tablespoon olive oil</li>



<li>Salt to taste</li>
</ul>



<p><strong>Method</strong></p>



<p>1 Prepare the slaw by thinly slicing the cabbage and the onion and then tossing in a tablespoon of olive oil and a generous pinch of salt.</p>



<p>2 Next, make the mango dressing by combining the chopped mango, lime juice, vinegar and olive oil in a blender. Blend until smooth and creamy.</p>



<p>3 Place each chicken breast between two sheets of cling film and using a meat mallet or rolling pin, gently pound the chicken until it is about 1cm thick. Season both sides.</p>



<p>4 In a large frying pan, heat a tablespoon of olive oil over medium-high heat. Once hot, add the chicken breasts and cook for three to four minutes, skin side down, or until golden brown. Turn over and cook again for three to four minutes or until cooked through. Remove from the pan and set aside. Cut each chicken breast into two.&nbsp;</p>



<p>5 Finally, make the brown butter using the same frying pan. Add the butter and let it melt over medium heat. Add the capers. Continue to cook, stirring occasionally, until the butter turns a deep golden brown and has a nutty aroma (about three to four minutes) and the capers have also crisped up.</p>



<p>6 Serve by spreading a spoon of mayonnaise onto the bun followed by the cabbage, chicken, mango dressing and bun top.</p>

<p>A hedgerow staple with a long history in herbal remedies, rosehips are now making a comeback — but this time in the kitchen. Packed with vitamin C and with a tangy-sweet flavour, rosehips can be transformed into syrup that’s ideal for drizzling over porridge, mixing into drinks, or preserving a taste of the seasons. <a href="http://woodlands.co.uk" target="_blank" rel="noreferrer noopener">Woodlands.co.uk</a> has all the inside info, thanks to father-and-son team Quentin and Greg Clark; talking you though the step-by-step process to make your own rosehip syrup — and sharing a recipe for a simple but elegant cocktail. <p class="has-medium-font-size"><strong>Before you start</strong></p>



<p>Before you begin foraging, it’s important to gather rosehips safely and responsibly…</p>



<p class="has-medium-font-size"><strong>1. Identify the right plant </strong></p>



<p>Rosehips come from wild dog roses (Rosa canina), commonly found in hedgerows and woodland edges. Look for oval, deep red fruits growing on arching, thorny stems once the summer roses have faded.</p>



<p class="has-medium-font-size"><strong>2. Pick at the right time</strong></p>



<p>Rosehips are best gathered after the first frost, which softens them slightly and enhances the flavour. However, you can also pick them earlier and briefly freeze them to mimic this effect.</p>



<p class="has-medium-font-size"><strong>3. Harvest responsibly </strong></p>



<p>Use scissors or secateurs to cut hips carefully and only take what you’ll use. Always leave enough for wildlife, especially birds who rely on them during winter.</p>

<p class="has-medium-font-size"><strong>1. Prepare the fruit</strong></p>



<p>Once collected, rinse the rosehips thoroughly to remove any dirt or insects. Trim the ends and discard any soft or shrivelled fruits.</p>



<p class="has-medium-font-size"><strong>2. Extract the flavour</strong></p>



<p>Roughly chop the rosehips or pulse them briefly in a food processor — this helps to release the flavour. Be aware that rosehips contain fine hairs inside that can irritate skin and throat if consumed, so they’ll need to be strained carefully later.</p>



<p class="has-medium-font-size"><strong>3. Get cooking</strong></p>



<p>Place the chopped fruit in a pan, cover with water, and bring to a gentle simmer. Cook for around 20–30 minutes, stirring occasionally.</p>



<p class="has-medium-font-size"><strong>4. Strain and sweeten</strong></p>



<p>After simmering, pour the mixture through a muslin cloth or fine sieve into a clean bowl to remove all solids and hairs. It’s worth straining the liquid twice to ensure clarity and safety. Return the strained liquid to a clean pan and add sugar (roughly 500g per litre of liquid, or to taste). Heat gently until the sugar dissolves, but don’t boil. Once dissolved, pour the syrup into sterilised bottles and seal.</p>

<p>Are you ready to unwine-d on a tour across Europe? </p>



<p>The continent is home to some of the best wine regions in the world, which means there is fierce competition. This list will transport you through rolling vineyards, rich aromas, deep reds, and sparkling whites.</p>



<h2 class="wp-block-heading">1. Nouvelle-Aquitaine, France</h2>



<p>Taking the number one spot in the ranking, Nouvelle Aquitaine is crowned the best wine region in Europe. The region has all the characteristics to be a wine lover’s paradise: from Languedoc to Bordeaux, including spirits such as Cognac and Armagnac. Nouvelle Aquitaine has more than 11,000 vineyards and is the second-largest wine area in France. The average price of a bottle of wine is 5€ (£4.20) in Bordeaux, its main city. Southwest France is also a tourist region known for its cuisine and magnificent scenery. So what are you waiting for? Grab your glass and get ready to taste all the regional specialities washed down by delicious wine!</p>



<p><strong>Tip:&nbsp;</strong>Take a trip to Arcachon and enjoy the delicious local oysters with a classic Bordeaux white wine, such as Pessac-Léognan blanc.</p>



<h2 class="wp-block-heading">2. Sicily, Italy</h2>



<p>In second place in the ranking we have Italy, the country has 6,342 wine producers. Beating out all the other regions is Sicily. Due to its geographical location, in the Mediterranean, this region has a long history that gives the island a rich and remarkable heritage. The wines are a reflection of this heritage and mix of cultures, many of which are becoming increasingly popular. Wines such as Malvasia, Novello and Catarratto Bianco are some of the wonders that await you on your next wine tour of Sicily.&nbsp;</p>



<p><strong>Tip:</strong>&nbsp;A visit to Sicily would not be complete without a boat trip to discover the Aeolian Islands. If you prefer to stay on land, the villages of Syracuse, Ragusa, Noto or Taormina will not disappoint.</p>

<h2 class="wp-block-heading">3. Castilia la Mancha, Spain</h2>



<p>Next up on our list we have Castilia la Mancha. This large region is located southeast of the Spanish capital Madrid. Their well priced table wines are made from various grape varieties. Traditionally, only varieties that could tolerate these hot and dry conditions were planted. The white grape variety came first, and was the most planted in Castilla-La Mancha (as well as in all of Spain). Tempranillo is by far the most popular red wine variety, followed by Cabernet Sauvignon and Merlot.</p>



<p><strong>Tip:</strong>&nbsp;Before setting out to discover the wines, take a guided tour of the Enchanted City located in the Natural Park of the Serranía de Cuenca, it is the second most famous Natural Monument in the province of Cuenca.</p>



<h2 class="wp-block-heading">4. Campania, Italy</h2>



<p>Campania in Italy boasts a huge variety of wines and is no wonder it takes fourth place in our ranking. The region has strong historical connections to wine, dating back to the 12th century BC, and is one of the oldest wine regions in Italy. Some of the best wines from this region are: Greco, Asprinio, Pallagrello white, Fiano, Falanghina, Coda di Volpe, Forastera and Biancolella.</p>



<p><strong>Tip:</strong>&nbsp;Take an unforgettable visit to the ruins of Pompeii, these constitute one of the most fascinating archeological experiences in the world.</p>



<h2 class="wp-block-heading">5. Umbria, Italy</h2>



<p>Coming in fifth place, known as the &#8216;green heart of Italy&#8217; we find Umbria. Here, there are three growers responsible for planting Sagrantino red grapes, as well as Sangiovese, Colorino and other Italian varieties. The producers also grow a variety of international grapes, mainly Merlot and Cabernet Sauvignon.&nbsp;</p>



<p><strong>Tip:</strong>&nbsp;If you are passionate about art, you can’t miss the Palazzo dei Priori, one of the most beautiful buildings in Perugia. It is home to the Galleria Nazionale dell’Umbria, a superb gallery of medieval and Renaissance Umbrian art.</p>

<p>France once again takes another region the ranking, now in sixth place. One of the main factors that led to its success is the number of existing wine producers, 4,625 to be exact. This region is known for being part of the famous Loire Valley, stretching from the Atlantic coast to the French Auvergne region along the Loire River. Here you will find the wonderful Muscadet wine, produced according to French traditions, contributing to a greater flavour and freshness.&nbsp;</p>



<p><strong>Tip:</strong>&nbsp;Take a tour of the region’s castles, Chambord Castle is the largest of them all, Azay le Rideau perhaps the most picturesque, and Chenonceau Castle is the ideal combination of castle, gardens and view, but you will soon have your own favourite when you visit.</p>



<h2 class="wp-block-heading">7. Comunidad Valenciana, Spain</h2>



<p>As we have seen so far, Spain presents itself as an excellent destination in Europe for wine lovers. One great advantage, a bottle of wine (medium range) costs about 4€ (£3.40) cashing in much cheaper compared to other European destinations. Landing the Valencian Community in seventh place on our list. You can find a wide variety of grapes here including: Monastrell, Tempranillo, Cabernet Sauvignon and Merlot. There are also seven growing regions and three classified wine producers.</p>



<p><strong>Tip:</strong>&nbsp;Come for the wine, but stay for much more, take a tour to Bocairente where you can travel into the Valencia countryside and discover this beautiful medieval town.</p>



<h2 class="wp-block-heading">8. Tuscany, Italy</h2>



<p>Tuscany offers visitors, some of the best wines in the world and programs to learn about them. There are four master’s degrees in Italy where you can further your knowledge. Whether you are a wine novice or a wine professional, you know that Tuscany is a place not to be missed. The region is responsible for producing some of the most highly regarded wines on the planet, such as Chianti, which can be found as far back as the 14th century. It’s hard to find a better region for wine production than Tuscany.&nbsp;</p>



<p><strong>Tip:</strong>&nbsp;Also, enjoy a bike ride to explore the hills and villages of Chianti or cook typical regional dishes with the locals.</p>

<p>This ranking would not be complete without Portugal and the main reason is due to the litres drunk per capita, 62.1 litres to be precise. Setúbal is a region where the land has always been worked, producing unique and distinctive profile wines. A land of traditions, stories and knowledge passed from generation to generation. With these attributes, the region holds not only national but also international awards for its wines.</p>



<p><strong>Tip:</strong>&nbsp;You can also enjoy various activities such as the Muscatel Route, the vineyard gardens walking trail and even family programs linked to wine.</p>



<h2 class="wp-block-heading">10. Piedmont, Italy</h2>



<p>Finishing the ranking, the Piedmont region is in our tenth and final place. If you want to learn more about Italian wines, Piemonte is one of the best wine regions to do so. On the one hand, this region introduces us to a new set of grapes to taste and understand, from Nebbiolo to Cortese. On the other, Piemonte is considered one of the best wine regions in Italy, bit it will cost you, a bottle of wine (medium range) costs about 6€ (£5), coming in not a cheap as some of the other regions in our list.</p>



<p><strong>Tip:</strong>&nbsp;Piemonte offers a wide variety of water activities such as canoeing, sailing and even windsurfing!</p>

<p>The brand, founded by two parents of young children and designed to offer health-conscious parents a no-compromise option, aims to encourage and inspire a love for the natural world and to boost kids’ overall health and happiness through its all-natural products and ethos.</p>

The products contain natural plant fibre, which is a prebiotic to help maintain gut health, as it contains 5g of your 12g <a href="https://www.efsa.europa.eu/en/efsajournal/pub/3951" target="_blank" rel="noreferrer noopener">RDA of chicory inulin</a>. The drinks also help support the immune system with added vitamins. <p>Each new year brings with it new and exciting food and drink trends to sink our teeth into. While recent years have tended towards the carnivorous, with swathes of burger joints and the emergence of moustachioed steak-lover Salt Bae, 2022 looks to be a much more sustainable, plant-powered year. </p>



<p>We’re looking after our bodies and our planet in 2022, and these are our predictions of what food and drink trends will come to the fore.</p>

<p>There’s many an eye roll and groan among meat eaters when people talk about veganism, and yet there’s a huge move towards plant-powered food in 2022. Not only are animals left unharmed in the production of vegan burgers, but there are also wider environmental benefits to moving towards meatless meals. Companies like Impossible make delicious vegan fast food that tastes just like McDonald&#8217;s, from their burgers to their nuggets.</p>

<p>From kombuchas to Japanese natto, fermenting is in fashion. There will be a big move towards the improvement of gut health in 2022, as people learn to listen to their intestines to support a whole host of health problems, both mental and physical. Fermented foods can help care for your insides and ease digestion, making for much happier guts.</p>

<p>Seeds and seed produce are ready to boom in popularity in 2022, starting with sunflower butter. It’s a great peanut butter alternative that can be made at home from sunflower seeds and is already appearing in big-brand ice cream products. Flaxseed and pumpkin seeds will also have a resurgence in 2022 to help boost our healthy fats.</p>

<p>Forty years on since Maison Bruno Paillard was founded, its Première Cuvée Extra Brut remains the flagship of the portfolio. A Multi Vintage Champagne, the Première Cuvée Extra Brut is a very personal interpretation of the region. Above all, it is a blend of vineyards, varieties and of vintages. </p>



<p>It is a blend of the three Champagne varieties: Pinot Noir, Chardonnay and Pinot Meunier. A total of 20% of the blend is fermented in barrel, with up to 50% of reserve wines in the blend. After three years maturation on the lees, and an extra low dosage, this is complex, and intensely elegant Champagne, with a precise, long finish.</p>
